Mini Pepperoni Spaghetti Pizzas

All time favorite Pizza but with spaghetti as the base. Perfect for kids of all ages!

Which kid does not like pizza? Or an adult for that matter! Your leftover spaghetti from last night’s dinner is  transformed into a portable mini pizza that kids are gonna adore:)

Toss cooled cooked spaghetti with egg, shape into 3-inch circles (or any size of your choice, but cooking time will vary). Bake to set the base.

Then, top with pizza sauce, mozzarella and a pepperoni. Bake until cheese melts.

Perfect for kids school lunch box!

Notes:

-Size is obviously your choice, but the baking time will vary

-If you like more sauce, then increase and same goes with cheese.

Mini Pepperoni Spaghetti Pizzas

Ingredients:

1/2 pound spaghetti, cooked, drained and cooled

1 large egg, lightly beaten

1 – 1 1/2 cups pizza or marinara sauce, store-bought or homemade

2 – 3 cups grated mozzarella cheese

15 slices pepperoni

Preperation:

Preheat oven to 400 degrees F. Grease 2 baking sheets with non-stick cooking spray or line with silpat and set aside.

Toss spaghetti with beaten egg, until evenly coated.

Place a 3-inch cookie cutter on a prepared baking sheet, place some spaghetti inside, pressing to fit. Gently remove the cookie cutter. Repeat process until all spaghetti is used.

Place a sheet pan in oven and bake for 10 minutes.

Remove pan, increase oven temperature to 450 degrees F.

Spread 1 tablespoon pizza sauce on each spaghetti base, top with 2-3 tablespoons mozzarella cheese and  then one slice of pepperoni. Repeat with all remaining base. Place in oven and bake for 8-10 minutes until cheese is melted.

Remove from oven and serve hot.

Repeat process with the remaining baking sheet, until all spaghetti is used.

Makes about 15 mini pizzas.
