Coconut-Pomegranate Streusel Bread


IMG_0792Is this bread baked for Percy Jackson? or did I manage to sneak some spinach into a bread? Not exactly!

The beautiful bluish green shade on the top layer is from the pomegranate seeds reacting with the leaveners in the batter. You can skip them if a green hue on top of a sweet bread is not your thing! I have always admired the beauty of pomegranate seeds, they add such vibrant color to any dish and looking for new ways to enjoy them. Pomegranate juice makes the bread very soft and delicious!

To make fresh pomegranate juice, cut a pomegranate in half and squeeze in a citrus juicer (treat it just like an orange).


2 cups all-purpose flour

1/2 cup unsweetened coconut flakes

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 stick unsalted butter, room temperature

3/4 cup sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

3/4 cup fresh pomegranate juice


1/2 cup unsweetened coconut flakes

1/2 cup pomegranate seeds, optional

2 tablespoons all-purpose flour

2 tablespoons unsalted butter, room temperature


Preheat oven to 350 degrees F. Grease a loaf pan (9x5x3 inch) with non-stick cooking spray and set aside.

Whisk together 2 cups flour, 1/2 cup coconut flakes, baking powder, baking soda and salt together in a medium bowl . Set aside.

Add 1 stick butter and sugar to a large bowl. Beat for 1-2 minutes with a hand held beater until creamy. Add both eggs and vanilla extract and beat until well combined.Switch to a rubber spatula, fold in half the flour mixture,until just mixed. Mix in the pomegranate juice and then the remaining flour (do not over mix). Transfer batter to the prepared pan, smooth top.

To make streusel, combine remaining 1/2 cup coconut flakes, pomegranate seeds (if using), 2 tablespoons flour and 2 tablespoons butter with your fingertips until thoroughly combined. Evenly sprinkle over the top of the batter. Place in oven and bake for about 1 hour or until a toothpick inserted in the middle comes clean. Cool completely in pan. Slice and enjoy.
