This recipe won the Kangaroo Flatbread Recipe Creation! YAY!
I have never had any leftovers of spinach artichoke dip at any party or get together. The dish is usually wiped clean! Though mine usually does not have any artichokes because my kids have a hard time picking it out! They group veggies into 3 categories – love it / don’t mind eating/ no way ! Sounds more like Baskin Robbins in my kitchen? Artichokes falls into the third category in my home. I have modified that recipe into a simple flatbread pizza, adding some chicken for protein , that can be made into a simple dinner.
Leftover rotisserie chicken works great!
Ingredients:
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper powder
1 teaspoon Italian seasoning
1/2 cup thinly sliced red onion
2 garlic cloves, finely chopped
2 cups chopped cooked chicken meat
2 cups chopped baby spinach
1 cup mozzarella cheese
5 slices pepper jack cheese
5 KANGAROO FLATBREADS
Preparation:
Combine first 10 ingredients in a large bowl and mix well.
Preheat broiler and set oven rack 8 inches from heat.
Place KANGAROO FLATBREADS on a large baking sheet , place 1 slice of pepper jack cheese on each flatbread and divide chicken-spinach filling evenly on top. Place baking sheet under the broiler and cook for about 8-10 minutes until golden brown . Serve hot.
