Banana-Coconut Bread



Banana bread needs no introduction! A twist to the traditional banana bread with the addition of coconut and coconut oil adding double the coconut punch!


1 1/2 cups all purpose flour
3/4 cup sweetened shredded coconut

1 1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2 large eggs

1/2 cup + 2 tablespoons sugar

1 teaspoon vanilla extract

1/4 cup coconut oil , melted and slightly cooled

1 cup mashed bananas (about 2 large )

1/4 cup plain yogurt


Preheat oven to 350 degrees F. Grease a loaf pan with non-stick cooking spray.

Whisk together first 6 ingredients in a large bowl. Set aside.

Combine next 4 ingredients in a medium bowl, beat with a hand held electric beater until smooth and creamy (about 1 minute). Beat in bananas until smooth. Beat in half the dry ingredients until just mixed, then beat in yogurt and finish off with remaining dry ingredients. Do not over mix. Pour batter into the prepared pan, smooth top, bake for about 55 minutes or until a toothpick inserted comes clean.

Cool completely on a wire rack, slice and serve with the best salted butter you have on hand.
