Soft baked peaches topped with crispy streusel, served with creamy greek yogurt or vanilla ice cream. Makes for an easy breakfast, snack or dessert!
While the kids are wandering around with phones to catch Pokemon and battle gyms, they return home (along with an army of friends) HUNGRY!! Summer vacation is all about 8 snacks a day, right?
These baked peaches makes me MOM-HAPPY!! Why you may ask? It involves fresh summer fruit, oats, pecans, greek yogurt and honey. Its all GOOD! And they are not opening a store bought treat, at least for now:) Fresh and hot or warm from the oven!
Let’s talk about these baked beauties…cut peaches in half, remove pits, and place on a baking pan. Mix all streusel ingredients in a bowl, place over each peach half and bake. Voila!

Baked Peaches with Oat-Pecan Streusel
Ingredients:
3 large peaches, halved and pitted
1/2 cup old fashioned oats
1/2 cup chopped pecans
1/4 cup all purpose flour
3 tablespoons sugar
3 tablespoons golden brown sugar, packed
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
4 tablespoons unsalted butter, room temperature
To serve,
greek yogurt
honey
Preperation:
Preheat oven to 425 degrees F. Spray a baking pan (enough to hold the peach halves in a single layer) with non-stick cooking spray.
Place peaches cut side up in a single layer on the baking pan.
Combine next 8 ingredients in a medium bowl, mix with your finger tips until thoroughly combined. Place about 1/4 cup measure streusel on each peach half (packing lightly).
Bake for about 20 minutes, until streusel is golden brown.
Serve hot, warm or at room temperature with greek yogurt and honey .
Makes 3 servings for breakfast or 6 servings for snack / dessert
