All the flavors of a strawberry-lime cheesecake in the form of a scone!
Who does not love a creamy dreamy cheesecake? Cool…creamy…velvety… luxurious…with a crumbly graham cracker crust…mmmm…..I could eat a slice right now! If that cheesecake was loaded with fresh ripe sweet strawberries and south of the border limes? Now, imagine all those flavors in the form of scones. That is what these are!
Light and tender cakey scones made with strawberries, cream cheese and some graham cracker crumbs and then glazed with a cream cheese glaze packed with the essence of limes.
If you have never made scones before , it comes together very easy in a food processor. Mix all dry ingredients, then mix in butter and cream cheese, followed by heavy cream. (You may also add the sliced strawberries along with heavy cream, instead of mixing them later). Stir in sliced strawberries, gather dough, shape into a disc, cut and bake.
Stir all glaze ingredients together and drizzle over scones.

Cut 2 1/2 inch circles and bake….

-To make graham cracker crumbs, before getting started with the scone making, grind few graham crackers in the food processor, transfer to a bowl and measure 1/2 cup for the recipe
-Quantity of milk is adjusted based on the consistency of the glaze that you desire
Strawberry-Lime Cream Cheese Scones
Strawberry cream cheese scones
1 1/2 cups all purpose flour
1/2 cup graham cracker crumbs (finely ground)
1/4 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
6 tablespoons unsalted butter, cold, cut into thin discs
4 tablespoons cream cheese, cold, cut into chunks
1/2 cup + 2 tablespoons heavy cream
1 cup thinly sliced strawberries
Lime cream cheese glaze
4 tablespoons cream cheese, room temperature
1 cup confectioners sugar
2 teaspoons lime zest
2 teaspoons lime juice
2 tablespoons milk
To make strawberry cream cheese scones,
Preheat oven to 450 degrees F. Line a baking sheet with parchment paper and set aside.
Combine first 6 ingredients in a food processor, process for 20 seconds until thoroughly combined.
Add butter and cream cheese, pulse about 10-15 times until you no longer see big chunks of butter. Add heavy cream and pulse few times, until the mixture looks crumbly and wet.
Dust the work surface liberally with flour, dump all the dough on the counter along with strawberries, gently gather the dough (mixing in the strawberries evenly) to form a even ball. Press to form a disc of about 3/4 inch height (dust top of bottom of disc with flour). Cut 10 circles with a 2 1/2 inch cookie cutter and place on the prepared baking sheet, spacing evenly (gather scraps, pat them and cut to get a total of 10 scones).
Bake for about 25 minutes until golden brown. Place sheet on a wire rack to cool completely.
To make lime cream cheese glaze,
Whisk all ingredients until smooth (adjust milk based on the consistency of the glaze) and drizzle over cooled scones. Serve after glaze sets (or not).
