No-Bake Fruit and Nut Bars

Guilt free bars perfect for school lunchbox or snack anytime!


Made with almonds, cashews, coconut,figs, dates, honey and chocolate, these bars come together super quick in a food processor.



Grind all nuts and some chocolate together and then the figs, dates and honey together. Mix both with your hands to form a dough ball. Why not dump everything in the food processor and grind? Well, I tried.  The machine had to struggle grinding everything. So, let us go with the world’s best tools …. our hands!

Roll into a square (almost!), spread melted chocolate on top, chill and then cut.



-To toast almonds, place almonds in baking sheet, bake for about 15 minutes in preheated 350 degree oven. Cool completely.

-I used medjool dates and calimyrna figs from Costco. Medjool dates are much softer and is easier to grind.

-Chop figs and dates into small chunks, makes the life of the processor lot easier.


No-Bake Fruit and Nut Bars


1 cup toasted almonds

1 cup sweetened shredded coconut

1 cup semi sweet chocolate chips, divided

1/2 cup cashews

1 cup chopped figs, about 8 large

1 cup chopped dates, about 12 large, remove pits

1/4 cup honey


Combine almonds, coconut, 1/4 cup chocolate chips and cashews in a food processor, process for about 15 seconds until coarsely ground. Transfer nut mixture into a large bowl.

Add figs, dates and honey into the same processor and process for 15 seconds, until coarsely ground. Transfer  into the nut mixture.

Mix thoroughly with hands, until it comes together as a dough ball. Roll between two sheets of parchment to a 9 – 10 inch square. Remove top parchment.

Melt remaining 3/4 cup chocolate chips in the microwave (in a microwave safe bowl) for about 1 1/2 minutes, until completely melted (stir every 30 seconds). Spread melted chocolate over the rolled bars, evenly.

Place in the refrigerator (along with the bottom parchment), until chocolate is set and bars are firm, at least 4 hours.

Remove from refrigerator, cut into desired shape and serve.

Optional step is to wrap each bar in a piece of parchment.

Store bars in the refrigerator

Makes 10-12 bars (1 1/2 inch x 4 inch)
