Ginger Blueberry Granita

A light and refreshing dessert celebrating the last blueberries of the season!



It’s officially Fall today !! All gorgeous summer fruits are not so gorgeous anymore:( But, I’m so looking forward to pumpkins, pears, apples, sweet potatoes,…. can’t beat fall colors!

Let us make use of the last bit of berries around and make a super light and refreshing dessert. A Granita is just blended fruit with some sugar and then frozen.

First, make a simple syrup with equal parts sugar and water and some thinly sliced ginger. Cool to room temperature.

Discard ginger slices and blend with blueberries and lemon juice. Pour into a container, cover and freeze until solid. Using a  fork, scrape all over to get tiny ice crystals and then spoon into a serving bowl. Serve immediately.

Ginger Blueberry Granita


Ginger Simple Syrup

1/4 cup sugar

1/4 cup water

1/2 inch ginger, thinly sliced

Ginger blueberry granita

1 cup blueberries

1 teaspoon lemon juice


To make ginger simple syrup,

Combine all ingredients in a small saucepan, bring to a boil in low heat, stirring occasionally. As soon it comes to a boil and sugar is dissolved take off heat and cool completely. Discard ginger slices.

To make ginger blueberry granita,

Combine blueberries, lemon juice and sugar syrup (remove the ginger slices)  in a small blender and blend until smooth. Pour into a freezer safe container (that has a tight fitting lid), cover  and freeze overnight.

Just before serving time, scrape granita with a fork and spoon into serving dish and serve immediately.

Makes 2 – 3 servings
