Is it even possible to take a chcolate chip cookie to the next level? Oh yes…we did!! Add some high quality chocolate chunks and salt to a crisp and chewy cookie and then layer a Nutella cream filling. The crisp cookie softens from the filling, making it extra yummy! Have you poured yourself a glass of milk yet?
Oh my! How many cookies my kids had to taste test before finding the perfect cookie for that filling. Not that I heard them complain:)
Chcolate chip cookie can be classified broadly into 2 main categories- soft and cakey kind / thin and crisp kind. My first choice was the thin and crisp, but the cookie was too crisp for the soft and creamy filling. So, that was out.
Next, a cakey cookie made it more like a whoopie pie than a cookie sandwich. So, I ended up with a recipe that made a crisp but chewy cookie that softened from the filling after few hours, the filling oozes out a touch around the sides while biting and was perfect for licking! It was the one!!!
The filling is more like a Nutella frosting and is delicious licked with just a spoon. Just saying:)

Salted Chocolate Chunk Cookie Sandwiches with Nutella Cream
Salted chocolate chunk cookies
3/4 cup all purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt, divided
4 tablepoons unsalted butter, room temperature
1 cup golden brown sugar, packed
1 large egg
1 teaspoon vanilla extract
4 ounces semi sweet chocolate, chopped into small chunks
3 tablepoons unsalted butter, room temperature
1/2 cup Nutella
1/4 cup confectioners sugar
2 tablespoons heavy cream
1 pinch salt
To make salted chocolate chunk cookies,
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper and set aside.
Whisk together flour, baking powder, baking soda and 1/4 teaspoon salt in a small bowl and set aside.
Combine butter and brown sugar in a large bowl, beat with a hand held electric beater for 3 minutes. Scrape bowl, add egg and vanilla, beat again for 2 minutes until light and fluffy.Add flour mixture, beat until well combined. Add chocolate chunks and beat for few seconds.
Scoop about 2 tablespoon measure dough on the 2 baking sheets, spacing 3-4 inches apart. Sprinkle remaining 1/4 teaspoon salt on top of cookie dough.
Bake one sheet at a time for 15-16 minutes per sheet, until golden in color. Place pan on a wire rack to cool completely .
To make Nutella cream,
Combine all ingredients in a medium bowl, beat with a hand held electric beater for 2 minutes, until light and fluffy.
To make cookie sandwiches,
Turn half the cookies, bottom side up, scoop about 2 tablespoon measure Nutella cream on each and then close with remaining cookies, bottom side down.
Let cookie sandwiches sit at room temperature for at least 6 hours before serving.
