Tender buttermilk pancakes made with whole wheat flour and ground walnuts and with a slice of apple cooked inside. The salted buttered maple syrup with an optional dash of whiskey is the perfect accompaniment!
IHOP recently added Apple ring pancakes to its long mouthwatering menu! I haven’t had a chance to try those fall pancakes served with cinnamon apple butter, YUM! Until then, I decided to come up with my own version of apple pancakes!
These pancakes are made only with whole wheat flour and walnuts ground together and then mixed with butter, eggs and buttermilk. A super healthy pancake, sorta!!! Pancake comes together super quick…
—process all dry ingredients until walnuts are ground
—mix in the butter
—stir along with eggs and buttermilk
—Make like any regular pancake, just place a sliced apple on the skillet before pouring the batter and cook on both sides
Talk about taking your good old maple syrup to another level! This syrup is addictive with or without the whiskey. So, if you don’t wanna open your liquor cabinet in the morning or you are gonna serve these for the kids, then go ahead and leave out the whiskey. It tastes delicious and is the perfect combo.

Whole Wheat Walnut Apple Pancakes with Whiskey Maple Syrup
Whole wheat walnut apple pancakes
2 cups whole wheat flour
1 cup walnuts
2 tablepoons sugar
2 teaspoons baking powder
1 teaspoon baking salt
1/2 teaspoon salt
4 tablespoons unsalted butter, room temperature
4 large eggs
2 cups buttermilk
3 medium size apples
additional butter, for making pancakes
Whiskey maple syrup
1/2 cup maple syrup
3 tablespoons unsalted butter, room temperature
1/2 teaspoon salt
1 tablespoon whiskey (optional)
To make whole wheat walnut apple pancakes,
Combine first 6 ingredients in a food processor, process for 30 seconds until walnuts are coarsely ground. Add butter and pulse 10 times, until evenly incorporated.
Whisk together eggs and buttermilk in a large bowl and then whisk in the processed dry ingredients, until just combined.
Core apples and cut into 1/4-inch thick slices.
Heat a large non-stick skillet over medium heat. Spread about 1 tablespoon butter in the hot skillet, place 4 apple slices on the hot skillet, spacing evenly. Pour 1/4 cup of batter on top of each slice, let pancakes cook until the bottom is deep golden and bubbles pop on the surface. Gently turn pancakes over and cook until deep golden on the other side as well.
Transfer pancakes onto a serving platter and repeat process until all batter is done.
Serve pancakes hot with whiskey maple syrup.
To make whiskey maple syrup,
Heat maple syrup, butter and salt in a small saucepan over low heat, until butter is melted.
Take off heat and stir in whiskey(if using).
