Light and refreshing mojito with fresh spring blueberries!
One of my favorite part of being a food blogger is taste testing, the boozy ones in particular. Weekends are more involved with taste testing various drinks and the sole purpose is to share my readers with fruity, delicious drinks (YES and nothing else….wink wink).
This mojito couldn’t be any easier – grab a glass, add blueberries and sugar, smash well with a muddler (until berries become pulpy and sugar is dissolved), stir in lime juice and rum. Add ice cubes, lime slices, fresh blueberries and top with plain soda. Cheers … you deserve it!!!!

Blueberry Smash Mojito
1/4 cup fresh blueberries
1 tablespoon sugar
1/2 ounce lime juice (1 tablespoon)
1 1/2 ounces white rum ( 3 tablespoons ), such as Bacardi
4 ounces plain soda ( 1/2 cup)
mint leaves (optional)
1. Grab a serving glass, add blueberries and sugar. Smash well with a muddler (until it gets pulpy and sugar is dissolved). Stir in lime juice and rum.
2. Add ice cubes, lime slice and fresh blueberries (to garnish). Top with plain soda and serve immediately.
Makes 1 drink
