Banana nut muffin, I mean, obviously.
I promise.
Toast your oats….need to, got to, have to.
Skill level – Easy
Banana Nut Muffin Overnight Oats
Ingredients:
1 cup old fashioned oats
1 tablespoon coconut oil
1 large ripe banana, mashed
1 cup milk (may substitute vegan milk )
2 tablespoon walnuts, chopped
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
Preparation:
1. Place a small skillet over medium-high heat, add oats and coconut oil when skillet when skillet is hot. Saute for about 2 minutes, until golden and toasted. Transfer into a bowl and stir all remaining ingredients. Cover bowl with plastic wrap (Oats can be portioned into individual mason jars) and place in the refrigerator overnight (about 8 hours ).
2. The next day, open, stir once and enjoy as is.
