Skill level – Easy
Dark chocolate Avocado truffles
5 ounces semi-sweet chocolate chips (refer notes), 3/4 cups
1/4 cup mashed ripe avocado, about 1/2 large
1/2 teaspoon vanilla extract
1 pinch salt
1/4 cup sliced almonds, chopped or crushed
1. Place chocolate chips in a medium microwavable bowl, microwave on high for 2 to 3 minutes (stirring every 30 seconds), until full melted. Stir in mashed avocado, vanilla extract and salt until completely smooth. Let cool completely at room temperature for several hours, until firm.
2. Pinch pieces of dough to make 10-12 balls. Place chopped almonds in a plate and roll the balls in the nuts, pressing slightly to adhere.
3. Store truffles in the refrigerator for several days. Serve at room temperature.
Makes 10-12 truffles.
Try to the best quality chocolate that you can find. I used my all time favorite Ghirardelli.
Confectioners sugar, cocoa powder, other types of chopped nuts, shredded coconut are all great options instead of sliced almonds.
