Almost healthy, hearty and loaded with sweet potatoes, oats and almonds. Gluten free sweet potato waffles are perfect for weekend brunch or frozen for later use. Just pop ’em in your toaster for a quick weekday morning breakfast or school lunch.
Friday lunch boxes need to be different. More yummier.
Definitely not one loaded with veggies. Yep!
But, mommy gets sneaky.
Let the children enjoy their Friday with a delicious waffle brunch box.
Aaaand, I load it with all healthy ingredients (with a veggie too).
All good for you ingredients:
Sweet potato, Oat flour, almond flour, eggs, milk, cinnamon and butter.
Wanna make it totally healthy? Replace butter with melted coconut oil.
No one will ever know that these are healthy. So delicious.
Anything that drips with maple syrup is got to be good, right?
My favorite part about these waffles? They use raw, grated sweet potato ( like this Amazingly soft sweet potato bread or muffins). No planning ahead for cooked, mashed sweet potato.
Which means, when you wanna some good healthy waffle, then you are good to go.
How to make gluten free sweet potato waffles?
Step-1 : Make Oat flour. What is oat flour? Simply grind old fashioned oats in a food processor or any dry grinder until very finely ground. About 1 and 1/4 cups old fashioned oats yields 1 cup oat flour. (But, measure 1 cup after grinding. Just to be careful)
Step-2 : Melt butter and let cool until lukewarm. (or coconut oil, if choosing the healthy route)
Step-3: Whisk oat flour, super fine almond flour, baking powder, ground cinnamon and salt together in a medium bowl (refer pictures above).

Step-4: Whisk eggs, milk and melted butter together.
Step-5: Mix dry into wet, until just combined. The batter will look thin. Leave aside for about 5 minutes while you grate the sweet potato to thicken slightly.
Step-6: Stir in sweet potatoes. Wash, peel and grate a small sweet potato in the coarse side of your box grater. Measure 2 cups for the recipe (refer pictures below).
Step-7: Make waffles.
How to enjoy gluten free sweet potato waffles?
- Eat hot with maple syrup
- Freeze leftovers for later use ( just pop one or two in your bread toaster whenever you crave waffles and these are homemade and so much healthier than the boxed variety)
- On a hectic weekday morning. As easy as toasting bread.
- For school lunch. My children’s favorite part! Pack warm waffles in a lunch box with maple syrup in a seperate jello shot containers and some dried fruits or berries.

Gluten Free Sweet Potato Waffles
- 4 tablespoons unsalted butter, melted and cooled slightly (or melted coconut oil)
- 1 cup milk
- 3 large eggs, whisked to combine
- maple syrup, to serve
- 2 cups grated sweet potato, refer notes
- Pre heat your waffle iron according to manufacture's instructions.
- Whisk all dry ingredients together in a medium bowl.
- Whisk all wet ingredients together in a larger bowl. Add whisked flour mixture and stir until just combined.
- Let batter stand for about 5 minutes. In the meantime, wash and peel a small sweet potato and grate in the coarse side of your box grater. Measure 2 cups for the recipe.
- Grease the waffle iron with non-stick cooking spray and pour about 1/3 cup batter for each waffle. Cook according to manufacturer's instructions.
- Repeat process to make remaining waffles.Serve immediately with maple syrup.
To freeze gluten free sweet potato waffles
- Transfer cooked waffles onto a wire rack to cool completely. Transfer into a large zip lock bag, seal and place in the freezer.
To meal prep gluten free sweet potato waffles
- If eating immediately - Pop frozen waffles into a bread toaster and toast until hot and serve maple syrup. To pack in lunch boxes - Pop frozen waffles into a bread toaster and toast until warm. Pack into meal prep containers with maple syrup in a seperate jello shot container and dried cranberries and cashews in another container.
