Tandoori Chicken Pockets

Spicy Tandoori Chicken Pockets are a creative Indian twist to the popular chicken egg rolls. Crispy egg roll wrappers are stuffed with rotisserie chicken combined with all the flavors of tandoori style seasoning and served with a creamy jalapeño mint yogurt sauce.

Quick and easy chicken pockets that are nothing but ordinary!!!

It all begins with an egg roll wrapper that is filled with an easy tandoori style chicken filling, shaped into square pockets instead of the traditional rolls, deep fried until crisp and then enjoyed with super flavorful dipping sauce.

The Filling

Tandoori chicken filling is spicy, tangy, crunchy, buttery with a few surprises. It is made with rotisserie chicken for convenience and then combined with all the flavors of a traditional tandoori, for a short cut method.

The Sauce

The sauce is creamy, tangy, spicy, fresh and packed with flavor. It is the perfect accompaniment to chicken pockets and is a must!!!

Main ingredients:

Egg roll wrappers – We used Twin dragon egg roll wrappers

Rotisserie chicken – Remove skin, bones and chop or shred chicken meat.

Yogurt – Plain greek yogurt or regular thick yogurt

Spices – cayenne pepper, coriander powder and jalapenos

Herbs – Fresh mint, cilantro

Other flavorings – Lime juice and salt

How to make chicken pockets?

Make Chicken filling – Stir together chopped or shredded rotisserie chicken, chopped onion, cashews, cilantro, yogurt, lime juice, coriander, cayenne and salt.

Shape and deep fry pockets – Place a egg roll wrapper on a work surface, brush the edges lightly with water, place about 1/2 cup chicken filling in the centre, fold two opposite corners above the chicken filling, overlapping the ends and pressing well to adhere.

Repeat process with the remaining two corners and then deep fry in moderately hot oil, until deep golden and crisp. Drain on paper towels.

Make sauce – Stir together finely chopped mint, cilantro, jalapeño pepper, yogurt, mayo, lime juice, salt and some water to thin it down.

Expert tips:

Sauce can be made ahead and refrigerated until serving time.

Any type of cooked leftover chicken (without much flavorings) can be used instead of rotisserie chicken.

Make it bite sized – Use wonton wrappers instead of egg roll wrappers and make similar square pockets for tiny bite sized treats.

The recipe isn’t complete without the sauce, so do not skip it.

Increase cayenne pepper to make it extra spicy.

Food color – Tandoori chicken has an iconic deep orange color. But, it is purely optional. The pockets is just as delicious without that.

Recipe can be easily halved or doubled, depending on the crowd.

Serving suggestions:

These chicken pockets are best enjoyed piping hot with the cool yogurt sauce. They are great as an appetizer for parties, get togethers or as a light meal.

Make ahead instructions:

Yogurt sauce can be made ahead for up to 2 days and refrigerated in a covered container.

Chicken filling can be prepared and stored in the refrigerator for up to 2 days.

Just before serving – Fill, shape chicken pockets, deep fry and serve.

Spicy Tandoori Chicken Pockets are a creative Indian twist to the popular chicken egg rolls. Crispy egg roll wrappers are stuffed with rotisserie chicken combined with all the flavors of tandoori chicken and served with a creamy jalapeño mint yogurt sauce.

Ingredients

Chicken pockets

Jalapeño mint yogurt sauce

  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise
  • 1/2 cup finely chopped mint leaves
  • 1/2 cup finely chopped cilantro
  • 3 to 4 tablespoons water
  • 2 tablespoons minced jalapeño pepper (more or less depending on your taste)
  • 2 tablespoons lime juice
  • 1 teaspoon salt

Instructions

Make tandoori chicken pockets


1. Add all chicken pocket ingredients (except egg roll wrappers and vegetable oil) into a large bowl and mix well, until thoroughly combined.

2. Into a large dutch oven or a large saucepan, pour vegetable oil until about 1 and 1/2 inches in height. Place over medium heat until moderately hot (about 350 degrees in a deep fry thermometer).

2. Place an egg roll wrapper on a clean work surface, brush all four edges lightly with water and place about 1/2 cup prepared chicken filling in the centre of the wrapper.

3. Fold two opposite corners above the chicken filling, overlapping the ends and pressing well to adhere.

4. Repeat process with the remaining two corners to make a square pocket (making sure the edges are sealed well and the filling is completely sealed inside).

5. Repeat process to make all remaining egg rolls.

6. Place about 3 to 4 pockets into the hot oil and fry until deep golden on both sides, about 2 to 3 minutes (turning occasionally). Drain on a paper towel lined sheet. Repeat process to cook remaining chicken pockets.

Make jalapeño mint yogurt sauce


1. Stir all sauce ingredients in a medium bowl and refrigerate until serving time.

Serve chicken pockets hot with yogurt sauce on the side.
