How to make chicken wontons?

Make sauce – Combine sweet chili sauce, sriracha sauce, lime juice and garlic powder together

Make filling – Stir together finely chopped rotisserie chicken, cabbage, carrot, cilantro and 3 tablespoons of the sauce and mix well.

Fill, shape wontons – Place one wonton wrapper on a clean work surface and lightly brush the edges with water. Using the tip of small sharp knife, start cutting a line (about 2 and 1/2 inches in length), from one corner to the opposite corner, without going through the edges (position the line approximately in the middle, refer pictures).

Cut four more lines, parallel to the first one (two on either side of the first line, spaced about 1/2-inch from each other), with each line measuring about 1 and 1/2 inches (cut the end ones smaller than the middle ones). Make sure you don’t go through the edges (refer pictures).

(This might look complicated, but once you get the idea, you don’t have to be precise with the measurements (an approximation will just be fine).

4. Place another wonton square on top and lightly brush the edges of the top square with water.

5. Place about a tablespoon of the prepared chicken filling in the centre and fold the square into a triangle (the cut wonton will be on the outside with the cut lines running across the triangle, again refer pictures), press the edges with two fingers to seal very well (refer pictures).

6. Repeat process to prepare remaining wontons.

(If you find these steps complicated then do the following instead – Place one wonton wrapper on a clean work surface, brush the edges lightly with water, place a tablespoon chicken filling in the centre, fold into a triangle, press edges to seal very well.

Deep fry – Deep fry wontons in a moderately hot oil, in batches, until golden brown on both sides. Drain on paper towels.

Finish sauce – To the remaining sauce, stir in mayo and some water.
