Vegan Mug Cake with Chocolate Chips

Vegan Chocolate Chip Mug Cake is one of the easiest dessert recipes! Made with all pantry ingredients, it is soft, fluffy with gooey melted chocolate chips and will satisfy your sweet tooth when a craving strikes.

Mug cakes are handy when you’re not in the mood to bake an entire cake like this Red velvet cake in a mug or banana mug cake. It is easy, quick and my favorite part is that it makes just one serving <— Portion control for the win.

This vegan cake in a mug is incredibly soft, light, fluffy, dairy free and almost tastes like a warm chocolate chip cookie. My kids love this along with their glass of milk after school or Friday night dessert when I’m not in the mood to bake.

All purpose flour

Brown sugar – We recommend golden brown sugar

Oil – Any flavorless oil like vegetable or canola

Milk – Any vegan or regular milk

Flavorings – Vanilla extract and salt

Leavening – Baking powder

Chocolate chips – Vegan dark chocolate chips

Method

Step-1: Stir all dry ingredients (all purpose flour, brown sugar, baking powder and salt together in a microwave safe coffee mug.

Step-2: Add all wet ingredients (dairy free milk, oil and vanilla extract) and mix until smooth and lump free. Stir in chocolate chips.

Step-3: Microwave dairy free mug cake for one minute and 45 seconds. Top with more chocolate chips and a touch of salt. Enjoy!

Expert tips

Not into vegan? Make the mug cake with regular milk and chocolate chips.

Stir batter until lump free – Using a spoon, stir the cake batter until smooth and no lumps remain.

Microwaves differ – This recipe was tested in two different microwaves and it took 105 seconds in one and 125 seconds in the other.

Best eaten hot – Enjoy this cake HOT! As with mug cakes, some might dry out a little when left at room temperature.

Serving suggestion:

Enjoy vegan microwave cake made without cocoa powder, HOT as soon as you remove from the microwave with big scoop of vegan whipped cream (I love this homemade recipe from Noracooks.com) or vanilla ice cream. Some mug cakes (depending on the type of microwave used) might get a little dry if left at room temperature for a long period of time.

Absolutely! But we highly recommend not doing so. Milk adds richness (this is a dessert after all) and more flavor when compared to just water.

Ingredients

Dry ingredients

  • 1/4 cup all purpose flour
  • 3 tablespoons golden brown sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt

Wet ingredients

  • 3 tablespoons milk (any vegan or regular milk)
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Additional ingredients

  • 2 to 3 tablespoons semi sweet chocolate chips, divided

Instructions

1. Add all dry ingredients into a microwave safe mug, stir well with a spoon or fork (making sure to break any lumps in brown sugar).

2. Add all wet ingredients, mix until very smooth. Stir in 2 tablespoons vegan chocolate chips.

3. Cook in microwave for one minute and 45 seconds (longer might make the cake dry) for a standard coffee mug and one minute and 40 seconds for a wider mug.

4. Remove, top with more chocolate chips ( I like to sprinkle a touch of coarse sea salt on top) and let cool for about a few seconds before serving.

5. Enjoy hot!
