Eggplant Parmesan is a dish where slices of eggplant are layered with marinara sauce and cheese, then baked until golden and bubbly.

How to choose an eggplant?

Look for a firm, unblemished, smooth skinned, and with a hefty weight. It should be shiny, not soft, and have a uniform dark purple.

Slice an eggplant into 1/2-inch thick slices

Dip each slice in an egg batter

Dredge each slice in the breadcrumb mixture

Air fry for 5 mins, flip and cook for  7 mins. 

Top with cheese and cook until it melts.
