Healthy-ish Chocolate Cheerios Breakfast Bars

Here is my simple, easy, no-bake cheerio breakfast bars made with plain cheerios, almonds, almond butter, cranberries, maple syrup and chocolate chips. Great for on the go breakfast or healthy snack.

  • Line a loaf pan with parchment paper (make sure that the parchment comes up the sides at least to about an inch) and set aside. 
  • Into a large microwavable bowl, add almond butter, maple syrup and chocolate chips. 
  • Microwave on high for about 45 seconds, until mixture gets hot. Remove bowl from microwave, stir well with a spatula until it gets very smooth and well combined.  
  • Stir in remaining ingredients (cheerios, sliced almonds and cranberries), until thoroghly combined. Transfer mixture to the prepared loaf pan. Using greased hand or a greased flat spatula or a piece of parchment paper, press mixture very well, until even and well packed. 
  • Place pan in the freezer for at least 2 hours, until frozen solid.
  • To cut bars, lift the parchment out of the pan using the sides ( or just turn pan upside down and tap onto a cutting board). Using a sharp knife, cut into 6 bars (or squares if preferred). 
  • Store bars in the freezer. Eat frozen. 

Notes

Double recipe can be made in a 8x8 square baking pan (increase microwave timing to one minute). 
Bars can be frozen for up to 2 months. 
Use peanut butter instead of almond butter.
