Mango Lime Granita

This mango lime granita is refreshingly cool, light, simple and pretty!!! Made with fresh mangoes and lime it is my go to on hot summer day.

Ingredients

  • 3 medium ripe mangoes
  • 2-4 tablespoons sugar
  • 2 tablespoons freshly squeezed lime juice

Instructions

  • Peel skin off mangoes and chop the flesh coarsely (try to get chop off all the flesh around the seed as well). 
  • Add chopped mangoes, sugar and lime juice into a blender (a food processer will work too). Blend until pureed well. (Sugar depends on the sweetness of the mangoes. Add 2 tablespoons of sugar, blend and taste. You want the mixture to be a little sweeter than what you would want (since the granita will taste less sweeter when frozen). Add more if required)
  • Transfer mixture into a freezer safe container, cover and freeze overnight or until solid. (Granita can be frozen for up to a week before serving)
  • Just before serving, remove granita from freezer and scrape with a fork into flaky ice crystals. Spoon granita into serving bowls. 

Notes

Sugar depends on the sweetness of the mangoes. Add 2 tablespoons of sugar, blend and taste. You want the mixture to be a little sweeter than what you would want (since the granita will taste less sweeter when frozen). Add more if required.

Use ripe, juicy mangoes that are not fibrous.
