Ingredients

Herb Butter-Mayo

  • 1/4 cup unsalted butter, room temperature (4 tablespoons)
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped mint leaves
  • 1/4 cup finely chopped cilantro
  • 2 tablespoons finely minced onion
  • 1 teaspoon finely chopped jalapeño pepper, optional
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt or depending on your taste

Addional ingredients

  • 8 slices white bread
  • 1/4 cucumber, cut into fairly thin slices
  • baby tomatoes
  • apple slices

Instructions

Make Herb butter-mayo

  1. Place butter in a medium bowl and stir vigorously with a spoon until soft and smooth. Add all remaining ingredients and stir until combined well.

Assemble sandwiches

  1. Spread a thin coating of herb butter-mayo on one side of each bread slice. Place a single layer of cucumber on 4 slices. Close sandwiches with the remaining 4.

Cut crusts off and then into halves or thirds. (HINT for easy cutting: Give the sandwich a gentle press with the palm of your hands before cutting. This helps the cucumber to adhere well to the butter-mayo mixture)

  2. Place into meal prep containers with baby tomatoes and sliced apples.

  3. Sandwiches are good in the refrigerator for up to 3 days.
