  • Divide white rice and salsa chickpeas into 2 meal prep containers
  • Sprinkle jalapeño (if using) and cilantro on top. Cover and store in refrigerator for later use or eat immediately. 
    Microwave until hot and top with sliced/ chopped avocado just before eating.
