Place one slice of rye bread on a cutting board, and using the 2 ½ inch cutter, cut out two overlapping circles to create the owl face.Tip: You will be left with one full circle and one crescent shape.
Cut two smaller circles for eyes from the two large overlapping circles.
Cut two wing shapes from the crescent shape
Using the 2 ½ inch cutter, cut a nose from the large full circle.
Cut two rounds for eyes from a sliced mozzarella, using the ¾-inch cutter.
Assemble sandwich
Place double layer of cheese on one slice of rye bread (cut to fit the bread). Place the cut face on top.
Place the nose in the centre and then two eyes on either side of the nose.
Place the mozzarella circles on top of the eyes and then top with a sliced olive to make pupils.
Wings - Place a tiny piece of cheese on either side of the face and place the wings on top.Tip: The wings will adhere to the face when the cheese melts upon cooking.
Break one toothpick in half and insert on each wing, pressing into the sandwich. This helps the wings hold in place and easier to transfer to the pan. Remove the toothpick before serving.
Cook sandwich
Preheat a skillet over medium heat. When moderately hot, add butter and carefully transfer the assembled Halloween sandwich holding both sides into the skillet.
Cover skillet with a lid and cook until cheese melts.Pro tip: Adjust heat between medium and low to ensure the bottom does not burn.Remove the toothpicks and serve hot!

Bread - I like to use dark rye bread slices for the color and shape.Cheese - Use a white colored cheese such as mozzarella, Monterey jack or Swiss cheese for the best look.Cook only one side - Unlike regular grilled cheese sandwiches that are cooked on both sides, this Halloween sandwich is cooked only on one side to maintain the look.
