This Christmas Fudge is the easiest recipe! You only need 2 main ingredients and 5 minutes of prep time to make it in your microwave. I topped it with dried raspberries and chopped pistachios to make it festive for the holiday season.
Line a 9-inch springform pan with aluminum foil , allowing it to come up the side for easy removal. Grease it lightly with some vegetable oil or use a thin coating of non-stick spray.
Add chocolate chips and sweetened condensed milk into a microwave safe bowl. Microwave for 1 to 2 minutes, stirring every 30 seconds, until it is melted and smooth. Stir in vanilla extract and salt. The mixture will be thick.
Immediately transfer mixture into the prepared pan, smooth top. Lightly grease the bottom of a glass or measuring cup with a bit of vegetable oil, then press the Christmas fudge mixture. This helps it set smoothly, eliminating any air pockets, resulting in an even top and facilitating even slices when cut.
Add a sprinkle of sea salt on top, along with your toppings, then gently press them to ensure they stick. Refrigerate for a minimum of 6 hours or until it becomes firm.
Slice and serve at room temperature.The fudge reaches an ideal consistency that melts as soon as you take a bite when it's at room temperature.
