Toppings

  • 1 large avocado or use guacamole
  • ½ cup pico de gallo or use salsa
  • ½ cup cooked corn
  • ½ cup shredded Mexican cheese optional
  • chopped cilantro
  • sliced jalapenos optional
  • Sour cream

Instructions

  • Divide rice between two bowls and then top with cooked chickpeas. Top with your favorite toppings and enjoy!

Notes

Feel free to customize with your favorite burrito bowl toppings.
Use cooked white rice, brown rice, cooked quinoa or chopped lettuce instead of cilantro lime rice.
Drizzle the chickpeas rice bowl with some sour cream or cilantro sauce.
