Everyone's favorite grilled cheese but made fun for lunch, dinner, snack, play dates or even your next get together. Grilled cheese sandwich on a stick is my new favorite way to pack lunch box.

Ingredients

Grilled Cheese sandwiches

  • 8 slices whole wheat bread, or any other kind
  • 3 tablespoons butter, room temperature
  • 6 tablespoons basil pesto
  • cup sun dried tomatoes, chopped
  • 2 cups shredded mozzarella

  • 8 medium skewers
  • cherry tomatoes
  • baby spinach leaves

Instructions

Make grilled cheese sandwiches

  • Preheat your waffle iron according to manufacture's instructions.
  • Working with 2 slices of bread, spread butter on the outer sides. One one inner side, spread some basil pesto, sprinkle sun dried tomatoes (how much ever you like) and about ½ cup of shredded mozzarella. Top with the other bread slice with buttered side outside. 
  • Place sandwich on the waffle iron, close and cook for a 1-2 minutes, until golden brown. 
    Repeat process with remaining 3 sandwiches.  

To make grilled cheese sandwich on a stick

  • Cut each sandwich into 6 squares. Skewer 3 sandwich squares alternating with baby spinach and finish with cherry tomato.
