Cucumber Sandwiches Meal Prep

Prep your lunch boxes for the week with this easy cucumber sandwiches. Made with a flavorful minty, lemony butter-mayo mixture and a hint of jalapeño pepper, this cucumber sandwiches meal prep are perfect for school lunch or snack.

Ingredients

Herb Butter-Mayo

  • ¼ cup unsalted butter, room temperature (4 tablespoons)
  • ¼ cup mayonnaise
  • ¼ cup finely chopped mint leaves
  • ¼ cup finely chopped cilantro
  • 2 tablespoons finely minced onion
  • 1 teaspoon finely chopped jalapeño pepper, optional
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt or depending on your taste

Addional ingredients

  • 8 slices white bread
  • ¼ cucumber, cut into fairly thin slices
  • baby tomatoes
  • apple slices

Instructions

Make Herb butter-mayo

  • Place butter in a medium bowl and stir vigorously with a spoon until soft and smooth. Add all remaining ingredients and stir until combined well. 

Assemble sandwiches

  • Spread a thin coating of herb butter-mayo on one side of each bread slice. Place a single layer of cucumber on 4 slices. Close sandwiches with the remaining 4.
    Cut crusts off and then into halves or thirds. (HINT for easy cutting: Give the sandwich a gentle press with the palm of your hands before cutting. This helps the cucumber to adhere well to the butter-mayo mixture) 
  • Place into meal prep containers with baby tomatoes and sliced apples.
  • Sandwiches are good in the refrigerator for up to 3 days.
