Tandoori Chicken Salad

THE BEST Tandoori chicken salad that you will ever eat!! Perfectly cooked authentic tandoori chicken, creamy raita inspired yogurt dressing, crisp roasted cashews, cucumber, lettuce, red onion and jalapeños, this Indian chicken salad is packed with tons of flavor and texture.

Ingredients

Tandoori Chicken Salad Dressing

  • 1/2 cup greek yogurt
  • 1/4 cup mayonnaise
  • 3 to 5 tablespoons water
  • 1/4 cup finely chopped mint
  • 1 tablespoon finely chopped jalapenos, or as required
  • 2 teaspoons lime juice
  • 1 clove garlic, grated
  • 1/4 teaspoon salt or as required

Tandoori Chicken Salad

  • 1 recipe Tandoori chicken
  • 8 cups chopped lettuce
  • 1/2 sliced cucumber
  • 1/2 cup roasted cashews
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped cilantro
  • sliced jalapeños, as required

Instructions

Make Tandoori Chicken Salad Dressing

  • Stir all tandoori chicken salad dressing ingredients together and refrigerate until serving time (adjust water to get the desired thickness)

Assemble Tandoori Chicken Salad

  • Place lettuce in a large bowl, top with tandoori chicken (chopped if desired), cucumber, cashews, red onion, cilantro and jalapeños. Pour the dressing on top of the salad and gently toss to combine. Serve immediately.  

Notes

Like it more spicy? 
  •     Grate jalapeños into the dressing 
  •     Increase cayenne pepper powder in the tandoori chicken recipe
  •     Top with as much sliced jalapeños as your heart desires. 
Like it less spicy? 
  •     Remove seeds before chopped jaalpenos for the dressing
  •     Omit sliced jaalpenos in the salad
