How to make breakfast croissant sandwiches in a waffle iron? Buttery croissants filled with soft cooked eggs, deli ham and cheddar cheese are pressed in a waffle iron for the ultimate crispy, toasty, cheesy perfection!!! These Breakfast croissant sandwiches just takes a homemade breakfast croissant sandwich and makes 10 times better.

Ingredients

  • 2 large eggs
  • 2 tablespoons whole milk
  • salt and pepper, to taste
  • 1 tablespoon butter
  • 4 mini croissants
  • 2 ounces thinly sliced ham
  • 2 ounces grated cheddar cheese

Instructions

  • In a medium bowl whisk together eggs, milk, salt, and pepper. Melt butter in a small non-stick saute pan over medium heat. Pour egg mixture into the skillet and cook for 2-3 minutes (stirring gently) until thickened and no visible liquid egg remains. Set aside.
  • To cook sandwiches, preheat a waffle iron. 
    In the meantime, cut croissants in half and then place a slice of ham, ¼th of cheddar and cooked eggs on the bottom half. Close with the top half and place in the hot waffle iron (one at a time).
    Cook according to manufactures instructions until deep golden in color (about 2 minutes)
  • Enjoy breakfast croissants sandwiches hot. 

Notes

To freeze - Make sandwiches and place them on a wire rack to cool completely. Place in a zip lock bag, seal and freeze. 
To reheat – Wrap a frozen ham and cheese sandwich in paper towel, microwave for one minute ( flipping once in between) and eat hot.
