Mexican Style Avocado Toast with Scrambled Eggs
This simple Mexican style avocado toast with scrambled eggs is so simple yet so delicious. Toasted bread is topped with buttery mashed avocado, spicy scramble eggs and store bought salsa for a quick and easy avocado recipe for dinner, lunch or breakfast.
Spicy scrambled eggs
- 3 large eggs
- 1 tablespoon milk
- 1/2 teaspoon taco seasoning
- 1/4 teaspoon red pepper flakes or as required
- salt to taste
- 1 tablespoon vegetable oil
- 2 slices bread (any type of bread that you have on hand), toasted
- Salsa, as required
- 1 large avocado, mashed
- chopped cilantro
- sliced or chopped jalapeños
- Salt and pepper, as required
Make scrambled eggs
Add eggs, milk, taco seasoning, red pepper flakes and salt into a medium bowl and whisk with a fork, until thoroughly combined. Heat vegetable oil in a small non-stick pan over medium heat. Add eggs, stir gently until cooked. Transfer eggs to a bowl.
