This Instant Pot Cilantro Lime Rice recipe is simple yet bursting with flavor, and is ready in under 20 minutes. With perfectly cooked rice infused with fresh lime and cilantro, it rivals the rice from Chipotle!

1cupchicken stock I used 33% reduced sodium chicken stock
½ to ¾ teaspoon salt
zest of one lime
juice of 1 and ½ limes
½cup chopped cilantro
Instructions
Rinse rice:Place measured rice in a fine mesh strainer and rinse under cold running water, agitating gently until water runs clear. Drain excess water.
Set Instant pot to saute setting. Once hot, add vegetable oil and then onion and garlic. Saute for about 2 minutes, until garlic begins to turn golden.
Add drained rice and continue to saute for about 30 seconds.
Stir in stock, salt and lime zest. Close, lock lid and make sure the valve is set to sealing. Pressure cook at high pressure for 3 minutes, then natural release for 10 minutes. Turn knob to venting position to release the remaining pressure.
Open lid and stir in lime juice and cilantro. Fluff rice with a fork, then serve warm.

Notes
Salt depends on the kind of stock used and your taste preference. I used 33% less sodium chicken stock and used ¾ teaspoon salt. You can make a double batch using the same ratio of rice and water. The cook time will remain the same.
