Simple Fall Snack box

Super simple and super healthy simple fall snack box with perfectly boiled eggs, baked sweet potatoes and sweet ripe pomegranates. Healthy and nutritious!

  • 3 boiled eggs, cut in halves
  • 1 tablespoon olive oil
  • 2 medium sweet potatoes (I used purple and white variety)
  • pomegranate arils
  • sea salt and coarsely ground black pepper


Bake sweet potatoes

  • Preheat oven to 425 degrees F. 
    Peel the skin of sweet potatoes and cut into 3/4th to 1 inch discs. Toss sweet potatoes with olive oil and place on a baking sheet (not touching each other). Bake for 20-30 minutes, until lightly browned and a knife inserted in the middle of a sweet potato slides easily. 
    Place pan on a wire rack to cool. 

Pack simple fall snack box

  • Divide eggs, sweet potatoes and pomegranate arils into meal prep containers. 
    Sprinkle eggs and sweet potatoes with sea salt and coarsely ground black pepper. 


1. I used two different types of sweet potatoes (Japanese and purple). But, you could totally use the normal orange ones. 
2. Sub pomegranate with any other fruit or avocadoes.
