Super simple and super healthy simple fall snack box with perfectly boiled eggs, baked sweet potatoes and sweet ripe pomegranates. Healthy and nutritious!
2 medium sweet potatoes (I used purple and white variety)
pomegranate arils
sea salt and coarsely ground black pepper
Instructions
Bake sweet potatoes
Preheat oven to 425 degrees F. Peel the skin of sweet potatoes and cut into ¾th to 1 inch discs. Toss sweet potatoes with olive oil and place on a baking sheet (not touching each other). Bake for 20-30 minutes, until lightly browned and a knife inserted in the middle of a sweet potato slides easily. Place pan on a wire rack to cool.
Pack simple fall snack box
Divide eggs, sweet potatoes and pomegranate arils into meal prep containers. Sprinkle eggs and sweet potatoes with sea salt and coarsely ground black pepper.
Notes
1. I used two different types of sweet potatoes (Japanese and purple). But, you could totally use the normal orange ones. 2. Sub pomegranate with any other fruit or avocadoes.
