Mix everything. Grate the zucchini using the coarse side of a box grater. Add it to a large bowl along with all the ingredients listed under “for the chicken burger patty.” Mix everything together until well combined.👉 I recommend measuring the grated zucchini before adding it, since zucchini sizes can vary. You’ll need 2 cups of grated zucchini for this recipe. Don’t pack it tightly when measuring—just lightly fill the cup.
Shape into patties. Divide the mixture into 4 equal portions. This will make large patties. If your burger buns are smaller, you can divide them into 5 instead.Keep a small bowl of water nearby, dip your hands in it, and shape each portion into a patty roughly the size of your bun. Place the shaped patties on a plate and repeat with the remaining mixture.
Air fry. Preheat air fryer to 370°F. When hot, place the prepared chicken patties in the basket, without overlapping and cook for about 9 minutes or until cooked through. Don't need to flip! 👉 Check for doneness - Gently press the center of the patty—if it springs back and feels firm, it's likely done. Alternatively, check with a meat thermometer; 165°F (74°C) means it's cooked through.👩🍳 If you’d like to add cheese, place a slice of mozzarella, cheddar, or pepper jack on top of each chicken patty during the last 30 seconds of cooking. Return to the air fryer just until the cheese starts to melt.
For the rest
Make suace. While the burgers are cooking, mix all the sauce ingredients in a small bowl. Taste and adjust the sriracha and salt to your preference, depending on how spicy or salty you like it.
Toast buns. Spread a thin coating of mayo or soft butter on the cut side of all buns and toast it in the air fryer or skillet.
Assemble. To assemble, generously spread the sauce on both the top and bottom halves of the burger buns. Add one chicken patty, then pile on your favorite toppings—I used sliced red onion, tomato, and lettuce. Close the burger and enjoy!
Notes
Make into meatballs: Shape the ground chicken and zucchini into meatballs and air fry at the same temperature.Zucchini: I recommend measuring the grated zucchini before adding it, since zucchini sizes can vary. You’ll need 2 cups of grated zucchini for this recipe. Don’t pack it too tightly when measuring—just lightly fill the cup.Don't have an air fryer? Simply pan fry the chicken and zucchini patties.Avoid Overcooking: Cook just until the internal temperature reaches 165°F (74°C)—usually around 8 to 10 minutes in the air fryer. Overcooking leads to a dry, chewy patty.
