Ingredients

Instructions

  • Prep shrimp. Pat the shrimp dry with paper towels to remove excess moisture. Transfer them to a bowl, add the remaining ingredients, and toss until the shrimp are evenly coated.
  • Air fry. Preheat air fryer to 400°F. When hot, place shrimp in a single layer and cook for 7 to 8 minutes or cooked through and tender.
👉 Cooking time: Large sized shrimp (21 to 25 per pound), cooks in 7 to 8 minutes whereas medium ones (31 to 40 per pound) will cook in 6 to 7 minutes.
  • Serve with lime wedges or use it to make tacos, rice bowls, quesadillas or Mexican salads.

Make into shrimp bowls

  • To make shrimp bowls, layer the cooked shrimp over cilantro lime rice (or plain rice), then top with sliced avocado and fresh tomato salad, black beans, and sweet corn. Finish with a generous drizzle of sour cream sauce.
To make avocado and tomato salad: Gently toss one large diced avocado with ½ cup chopped tomatoes, 2 tablespoons thinly sliced red onion, a squeeze of fresh lemon juice, a little finely chopped jalapeño, and salt to taste. Mix carefully to keep the avocado chunks intact.
To make sour cream sauce: Stir sour cream with salt, lemon juice, and a splash of water.

Notes

Don't overcrowd - We used 6 quart Instant Vortex air fryer and was able to cook one pound per batch. Cook in batches if using a larger quantity.
Cook in a single layer - This ensures that they don't steam and cooks fast.
Pat dry - Make sure to pat dry well with paper towels so the oil and spices will stick to them.
