Stir all teriyaki sauce ingredients together in a bowl or measuring cup, for 1 to 2 minutes, or until most of the sugar is dissolved.
Pat the chicken thighs dry with paper towels and place them in a medium bowl. Add about half of the teriyaki sauce and toss until the chicken is evenly coated. If you have time, let it marinate for about 30 minutes for the best flavor, but even 5 minutes will do the trick.
Meanwhile, pour the remaining teriyaki sauce into a small saucepan and whisk in the cornstarch until completely dissolved. Place over low heat and bring to a gentle simmer, stirring constantly. Cook for about 30–40 seconds, then remove from the heat. The sauce will continue to thicken slightly as it cools.
Preheat your air fryer to 400°F. Once hot, arrange the chicken thighs smooth-side down in a single layer and cook for 5 minutes. Open the air fryer, brush the tops generously with the thickened teriyaki sauce, flip the chicken using tongs, and brush the other side with more sauce. Continue cooking for another 5 to 6 minutes, or until the chicken is cooked through and beautifully glazed.
When the chicken is done, brush on one final layer of teriyaki sauce for an extra glossy finish. Slice into bite-sized pieces and serve warm over rice.

Soy sauce – Use regular soy and not light or dark.Does the teriyaki chicken taste sweet? No! The sugar is balanced with salty soy sauce and spices, so it does not taste sweet.Be careful not to overcook the chicken or it will start to dry out. If using breasts, cook at 380 degrees for 6 minutes, flip over and cook for an additional 6 minutes, or until completely cooked.
