  • Mix dry ingredients. Add the almond flour, brown sugar, cinnamon, baking powder and salt into a medium bowl, whisk to combine.
  • Finish batter. In a large bowl, whisk together the eggs, pumpkin purée, and milk until smooth. Add the dry ingredients and whisk just until everything is well combined and no dry streaks remain.
  • Cook. Heat a nonstick skillet or griddle over medium-low heat and lightly grease it with coconut oil or butter. Once moderately hot, pour about ¼ cup of batter into the skillet and gently spread it into a circle. Cook until the bottom is golden brown and the top begins to set, then carefully flip and cook until the other side is golden.
    👉These are more delicate than traditional pancakes. Keep each pancake to ¼ cup of batter to make flipping easier. They also brown more quickly due to the almond flour, brown sugar, pumpkin, and spices, so adjust the heat between low and medium as needed to prevent them from browning too fast.
  • Finish. Repeat with remaining batter to make remaining pancakes and serve hot with a generous drizzle of maple syrup.

size - Use about ¼ cup batter to make medium sized healthy pumpkin pancakes.
Batter consistency – The batter should be slightly thick but still spreadable consistency. Adjust the amount of milk as needed to achieve this desired texture.
Heat – Cook on low to medium heat to prevent browning too fast.
Pumpkin puree - Use 100 percent pumpkin puree and not pumpkin pie filling.
