Roasted Acorn Squash Slices

Ingredients

  • 1 acorn squash (1 ½ to 2 pounds)
  • 3 tablespoons melted unsalted butter
  • 3 tablespoons packed light brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • teaspoon ground cumin

Instructions

  • Preheat the oven to 425°F.
  • Prep squash. Wash the squash, then carefully cut it in half from top to bottom. Use a spoon to scoop out the seeds and any stringy pieces from the center. Place each half cut-side down on the cutting board and slice into ¾-inch thick slices.
  • Choose your baking sheet. Choose a baking sheet that fits the squash slices in a single layer without leaving too much empty space. You don’t want an oversized pan! Keeping the slices closer together helps them soak up all that brown sugar and butter for the best flavor.
  • Mix. Add the sliced squash to the baking sheet, then add all the remaining ingredients. Use your hands to toss everything together until the squash is evenly coated. Spread the pieces out in a single layer for even cooking.
  • Bake. Bake for 35 to 40 minutes, flipping the squash halfway through with a spatula to help it caramelize evenly and get a deep golden brown color. Enjoy!

Notes

Make it vegan - Replace butter with melted coconut or olive oil for a vegan option.
