Instructions
Prep strawberries. Choose strawberries with flatter sides rather than very round ones so they sit securely on the platter without tipping over. Slice them in half through the stem so each bite keeps a bit of green—it makes for a prettier presentation.👉 If any strawberry halves don’t sit flat, trim off a thin slice along the bottom to create a stable base and prevent them from tipping over.
Beat the cream. Add the heavy cream, confectioners’ sugar, vanilla, and salt to a medium bowl. Beat on high with an electric mixer until stiff peaks form. Add the Greek yogurt and beat for about 20 seconds, just until combined. Be careful not to overmix, or the cream may lose its stiffness.
Pipe. Spoon the whipped cream into a pastry bag fitted with a large star tip (such as Wilton 8B or 1M). Pipe a dollop onto the cut side of each strawberry half, then arrange them on a serving tray.👉 To keep it simple, skip the piping bag and use a small ice cream scoop—or just a spoon—to add dollops of cream to the strawberries.
Serve immediately, or refrigerate for a couple of hours before serving.
