Make batter. Add the eggs, flour, salt, black pepper, cayenne, and garlic powder to a shallow bowl. Whisk until smooth and well combined.
Panko. Place panko breadcrumbs in another shallow bowl or plate.
Bread. Working with one fillet at a time, dip the tilapia into the wet batter, turning it a couple of times to coat it well. Lift it out with your hands or tongs and let any excess batter drip off. Place it over the breadcrumbs, then gently press the crumbs onto both sides of the fish so they stick. Transfer the breaded fillet to a plate and repeat with the remaining tilapia.
Air fry. Preheat the air fryer to 400°F. Once hot, arrange the breaded tilapia in a single layer, leaving some space between the fillets. Lightly spray the tops with cooking spray and air fry for 10 to 12 minutes, or until the fish is cooked through. No need to flip!👉 For an extra golden, crispy crust, give the tops another light spray of oil halfway through cooking.
Serving. Serve with homemade tartar sauce (recipe in the notes), or turn the crispy tilapia into fish tacos or a delicious fish sandwich!
