These Almond Flour Banana Muffins are made in under 10 minutes. Made using wholesome ingredients like almond flour and almond butter, these are amazingly healthy without any added fat.
Prep. Preheat oven to 350°F (177°C) and line a standard muffin pan with 6 paper liners.
Mix dry ingredients. Add the 1 ¼ cups + 2 tablespoons almond flour, ½ teaspoon baking powder, ½ teaspoon cinnamon and ¼ teaspoon salt into a medium bowl and whisk to combine.
Mix wet ingredients. Into another larger bowl, add the ½ cup mashed banana, 1 egg, ¼ cup packed brown sugar, 2 tablespoons nut butter and ½ teaspoon vanilla, whisk until smooth. 👉 Mash one large banana, then measure to make sure you have ½ cup. If you’re a little short, add a bit more; if there’s extra, just remove some. Bananas vary in size, so measuring helps keep the texture just right.
Finish batter. Add the combined dry ingredients, chopped walnuts and chocolate chips. Mix well to combine.
Bake. Divide the batter into the prepared muffin pan, sprinkle some chopped walnuts and chocolate chips on top and bake for 23 to 26 minutes or until a toothpick inserted in the middle of a muffin comes clean. Place the pan on a wire rack to cool completely.

Notes
Use over ripe bananas – Ugly over ripe bananas (dark yellow skin with lots of brown spots).Use super fine almond flour and not almond meal. The latter will yield a much denser muffin since it contains the skin as well.
