Add coconut oil into a microwave safe coffee mug and microwave for a few seconds until melted (don't let it get hot).
Remove the mug from the microwave and add all remaining ingredients and stir thoroughly with a spoon.
Microwave for 2 minutes (remove 10 seconds earlier if you are using a wide mug). Let it rest for one minute and then enjoy with sweetened Greek yogurt or whipped cream.
Serve: You can enjoy it straight from the mug or invert it onto a plate, slice and serve like a real cake. 👉 To remove it onto a plate, use a spoon to gently release the cake from the bottom of the mug and then invert!
