Avocado Waffles

These Avocado Waffles are made using creamy mashed avocado instead of butter or oil, resulting in a soft, fluffy texture with a slightly crisp exterior. They are studded with dark chocolate chips for an indulgent touch of decadence.

  • Preheat a waffle iron according to manufacture’s instructions.
  • Add the mashed avocado, eggs and buttermilk into a medium bowl and whisk well.
    Tip: Mash the avocado until it’s perfectly smooth and free of lumps.
  • In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and baking soda. Gently fold in the buttermilk mixture and chocolate chips until just combined. Be careful not to overmix.
  • Lightly grease the waffle iron with cooking spray. Pour about ⅓ cup of batter onto the iron for each waffle. Cook until deep golden brown, which took 5 to 6 minutes per batch in my waffle iron.
  • Serve hot with maple syrup.

Notes

You can omit the chocolate chips if you prefer, but I highly recommend including them. The blend of avocado and chocolate is truly irresistible.
Mash avocado until very smooth and lump free.
