Face outline. Place a slice of rye bread on a cutting board. Using the 2½-inch cutter, cut two overlapping circles to create the owl’s face outline. You’ll end up with one full circle and one crescent-shaped piece.
Eyes. Cut two smaller circles for the eyes from the full circle and crescent-shaped piece.Nose. Using the 2½-inch cutter, cut out a nose from the remaining part of the large circle.
Wings. Then, use the remaining crescent-shaped piece to cut out two wing shapes.
Cheese eyes. Cut two rounds for eyes from a slice of mozzarella using the ¾-inch cutter (smaller than the bread circles cut out for eyes).
Assemble sandwich
Face and eyes. Place a double layer of cheese, cut to fit, on one whole slice of rye bread. Place the cut face on top. Place the nose in the center, then add the two eyes on either side.
Finish eyes. Place the mozzarella circles over the eyes, then top each one with a slice of olive to create the pupils.
Fix wings. Place a tiny piece of cheese on each side of the face, then place a wing on top. The cheese will melt and help hold the wings in place while cooking.Break a toothpick in half and insert one piece through each wing and into the sandwich. This keeps the wings secure and makes the sandwich easier to transfer to the skillet. Remove the toothpicks before serving.
Cook sandwich
Preheat a skillet over medium heat. Once hot, add some butter and carefully transfer the sandwich to the skillet, holding it from both sides.Cover and cook on one side until the cheese is melted, adjusting the heat between medium and low as needed to prevent the bottom from burning. Do not flip the sandwich.
Serve. Remove the toothpicks before serving, then watch your kids’ faces light up when they see the spooky little sandwich!

Notes
Bread - I like to use dark rye bread slices for the color and shape.Cheese - Use a white colored cheese such as mozzarella, Monterey jack or Swiss cheese for the best look.Cook only one side - Unlike regular grilled cheese sandwiches that are cooked on both sides, this Halloween sandwich is cooked only on one side to maintain the look.
