Peanut Butter Toast

This peanut butter toast is not your everyday toast! Peanut butter is mixed with egg, then baked or air fried to create a sweet, custardy center. The result is a high-protein breakfast or snack with about 11 grams of protein per toast.

Equipment

Ingredients

  • ¼ cup peanut butter use Jif or Skippy, not natural kind
  • 1 large egg
  • 1 tablespoon honey or maple syrup
  • 1 to 2 tablespoons semi sweet chocolate chips optional but recommended
  • 2 slices white bread

Instructions

  • Make filling. Add the peanut butter, egg, and maple syrup or honey to a medium bowl and mix until smooth and creamy. At first, the mixture will look very liquid, but it will quickly thicken into a paste-like consistency as you continue stirring. Fold in the chocolate chips.
  • Press bread. Using your fingers or the back of a spoon, gently press into the center of each slice of bread to create an indentation, forming a rim around the edges without pressing all the way through.
  • Fill. Using a spoon, divide the peanut butter filling evenly between the two slices of bread and spread it into the indentation, leaving a ½ inch border around the edges.

To Air Fry

  • Preheat the air fryer to 340°F, then place the toasts in the hot basket. Cook for 4–5 minutes, checking after 4 minutes, until the tops are golden brown. Sprinkle powdered sugar on top and enjoy!
👉 Cooking too long can cause the tops to overbrown or burn, so keep a close eye during the final minute.

Bake in oven

  • Preheat oven to 350°F and place toasts on a baking sheet. Bake for 7 to 10 minutes or until the tops are golden brown in color. Sprinkle powdered sugar on top and enjoy!
👉 Cooking too long can cause the tops to overbrown or burn, so keep a close eye on them and remove promptly.

Notes

Types of bread to use – Any white bread like white sandwich, soft Italian, soft French, Texas style, Brioche, or even regular wheat will work.
Other nut butter – Almond butter, Sun butter, cashew butter will work.
Cooking time - If removed too early, the toast won't have enough time for the custard to fully set, leaving the inside slightly runny.
