Pecan Pie Date Balls

These Pecan Pie Date Balls are easy, and a healthy sweet snack with just 2 main ingredients - there is no cooking or baking. I took all the flavors of a classic pecan pie and made it into a healthy, wholesome snack. Vegan, Gluten-free, Dairy-free, clean eating snack!

  • Select soft dates. Go through the dates and use only soft dates. There’s no other binding ingredient, so drier dates won’t hold together and may crumble when rolled into balls.
  • Process. Add all the ingredients to a food processor and pulse in short 1-second bursts until everything is finely broken down. Be careful not to blend it into a paste. To test the texture, pinch a small amount between your fingers—it should hold together. If it doesn’t, pulse a few more times.
  • Roll into balls. Take a portion of the mixture, pinch it with your fingers, and shape it into balls. Store in the fridge!

Notes

Number of dates: I used 9 very large dates from Costco and the sweetness was perfect. If your dates are smaller or you like it very sweet, then use 10 or 11 dates.
