Select soft dates. Go through the dates and use only soft dates. There’s no other binding ingredient, so drier dates won’t hold together and may crumble when rolled into balls.
Process. Add all the ingredients to a food processor and pulse in short 1-second bursts until everything is finely broken down. Be careful not to blend it into a paste. To test the texture, pinch a small amount between your fingers—it should hold together. If it doesn’t, pulse a few more times.
Roll into balls. Take a portion of the mixture, pinch it with your fingers, and shape it into balls. Store in the fridge!
Notes
Number of dates: I used 9 very large dates from Costco and the sweetness was perfect. If your dates are smaller or you like it very sweet, then use 10 or 11 dates.
