    Naturally sweet dates mimic that deep caramel taste, while toasted pecans add crunch, richness, and healthy fats. The result is a soft, chewy bite that feels indulgent but is made with wholesome ingredients.

    They’re also incredibly easy to make—just add everything to a food processor, blend until combined, and roll into balls. No baking, no complicated steps. Perfect as a quick snack, healthy dessert, or make-ahead treat, these are a delicious way to enjoy pecan pie flavors in a lighter, everyday form.

    • Dates: As with all recipes with Medjool dates, I prefer using soft Medjool dates for their rich, caramel-like flavor and soft, chewy texture, which grind more easily and also gives these bites a taste like an actual pecan pie.
    • Pecans: Use toasted pecans and not raw ones. Toasted pecans add wonderful crunch and texture. You can refer to our blog post on how to toast pecans.
    • Flavorings: I add ground cinnamon and vanilla extract and it tastes like pecan pie.

    Ingredients

    • 1 cup toasted pecans
    • 10 pitted medjool dates
    • ½ teaspoon ground cinnamon
    • ¼ teaspoon vanilla extract
    • ⅛ teaspoon salt

    Instructions

    • Select soft dates. Go through the dates and use only soft dates. There’s no other binding ingredient, so drier dates won’t hold together and may crumble when rolled into balls.
    • Process. Add all the ingredients to a food processor and pulse in short 1-second bursts until everything is finely broken down. Be careful not to blend it into a paste. To test the texture, pinch a small amount between your fingers—it should hold together. If it doesn’t, pulse a few more times.
    • Roll into balls. Take a portion of the mixture, pinch it with your fingers, and shape it into balls. Store in the fridge!

    Notes

    Number of dates: I used 9 very large dates from Costco and the sweetness was perfect. If your dates are smaller or you like it very sweet, then use 10 or 11 dates.
