Pizza Pancakes

Pizza Pancakes - Fluffy buttermilk pancakes with all the flavors of a classic pizza! Ideal for dinner, these savory pancakes are served with marinara sauce instead of traditional maple syrup! Mix in your favorite pizza toppings to make it your own!

Ingredients

Dry ingredients

Wet ingredients

  • 2 tablespoons unsalted butter room temperature
  • 1 large egg
  • ¾ cup buttermilk
  • ¾ cup shredded mozzarella
  • 2 tablespoons grated parmesan
  • 3 tablespoons olive oil for cooking pancakes
  • marinara sauce for serving

Optional add ins (Use a total of ¼ cup or less)

  • chopped pepperoni
  • chopped black olives
  • diced green bell pepper
  • chopped basil
  • red pepper flakes

Instructions

  • Whisk all dry ingredients together in a large bowl.
  • Add butter and mix with your fingertips, until it resembles coarse sand.
  • In a seperate bowl, mix egg and buttermilk. Pour into the flour mixture and stir with a rubber spatula until mostly combined.
  • Stir in both cheeses and any other optional add-ins that you like to add.
    Tip: Don't use more ¼ cup of mix-ins.

Cook pancakes

  • Preheat a medium non-stick pan over medium heat. Once heated, drizzle approximately 1 and ½ tablespoons of olive oil onto the pan.
    Spoon roughly ¼ cup of batter onto the hot skillet, then gently spread it out with the back of a spoon.
  • Cook for about 2 minutes or until the bottom is deep golden brown and tiny bubbles appear on the top.
    Flip pancakes and cook for addional 1-2 minutes, or golden brown on the bottom.
  • Remove the pancakes onto a plate and repeat process to make 4 more pancakes. Serve hot with marinara sauce on the side for dipping.

Do not reduce olive oil. It not only enhances the flavor but also aids in creating a thin, crisp crust on the pizza pancakes.
Do not add more than ¼ cup of total add-ins.
If you are out of buttermilk, then here is a really good method to make your own in a pinch – Mix 1 cup milk and 3 tablespoons of white vinegar or lemon juice. Let it stand for about 10 minutes. Stir before using and measure 1 cup for the recipe.
