Serving suggestions
As previously mentioned, these pizza pancakes are ideally accompanied by a flavorful marinara sauce. Personally, I find that a spicy arrabbiata sauce takes the pizza experience to the next level. Serve with a side salad or grilled veggies to make a complete dinner.

Freezing & Reheating
Prepare and allow the pizza pancakes to cool. Place them in a zip lock bag, seal tightly, and store in the freezer for up to 2 months.
When ready to enjoy, thaw them to room temperature. Heat in a medium-hot nonstick skillet without any oil, flipping occasionally until heated through. Serve pizza pancakes alongside marinara sauce for dipping.
Helpful tips
- Olive oil - Do not reduce olive oil. It not only enhances the flavor but also aids in creating a thin, crisp crust on the pizza pancakes.
- Add-ins - Do not add more than ¼ cup of total add-ins.
- Buttermilk – If you are out of buttermilk, then here is a really good method to make your own in a pinch – Mix 1 cup milk and 3 tablespoons of white vinegar or lemon juice. Let it stand for about 10 minutes. Stir before using and measure 1 cup for the recipe.
