1cup halved cherry tomatoes(or use chopped tomatoes)
½slicedcucumber
½cup roasted cashews
½cup thinly sliced red onion
Instructions
Make Dressing
Add all ingredients into a mini food processor or blender and process until smooth. Tip: Add as much or as little jalapeno as you'd like.
Assemble Salad
Place lettuce in a large bowl, top with sliced or chopped tandoori chicken, cucumber, cashews, red onion and tomatoes.
Drizzle the dressing on top of the salad and gently toss to combine. Serve immediately.

How to toast cashews - To toast , place them in sheet pan and bake for 5 to 10 minutes in a pre heated 350 degree oven or you begin to smell the fragrance or it turns golden in color.
