Mint Yogurt Dressing
- ½ cup lightly packed mint leaves
- ½ cup plain yogurt
- ¼ cup mayonnaise
- ½ to 1 jalapeno pepper use as needed
- ½ lemon, juiced
- 1 clove garlic
- Salt to taste
Tandoori Chicken Salad

- 8 cups chopped lettuce
- 1 cup halved cherry tomatoes (or use chopped tomatoes)
- ½ sliced cucumber
- ½ cup roasted cashews
- ½ cup thinly sliced red onion
Instructions
Make Dressing
- Add all ingredients into a mini food processor or blender and process until smooth. Tip: Add as much or as little jalapeno as you'd like.
Assemble Salad
- Place lettuce in a large bowl, top with sliced or chopped tandoori chicken, cucumber, cashews, red onion and tomatoes.
