    This tandoori chicken salad AKA Indian chicken salad, is nothing like the boring, tasteless ones you're used to. It's not drowned in mayo either!

    It is packed with an authentic tandoori chicken that is easily made in the air fryer, fresh lettuce, juicy cherry tomatoes, crisp cucumber, crunchy cashews and thinly sliced red onion.

    It is then topped with an amazing mint yogurt salad dressing that is vibrant, refreshing and creamy.

    Ingredients

    Mint Yogurt Dressing

    • ½ cup lightly packed mint leaves
    • ½ cup plain yogurt
    • ¼ cup mayonnaise
    • ½ to 1 jalapeno pepper use as needed
    • ½ lemon, juiced
    • 1 clove garlic
    • Salt to taste

    Tandoori Chicken Salad

    • 1 recipe Tandoori chicken (Click the link for the recipe)
    • 8 cups chopped lettuce
    • 1 cup halved cherry tomatoes (or use chopped tomatoes)
    • ½ sliced cucumber
    • ½ cup roasted cashews
    • ½ cup thinly sliced red onion

    Instructions

    Make Dressing

    • Add all ingredients into a mini food processor or blender and process until smooth.
      Tip: Add as much or as little jalapeno as you'd like.

    Assemble Salad

    • Place lettuce in a large bowl, top with sliced or chopped tandoori chicken, cucumber, cashews, red onion and tomatoes.
    • Drizzle the dressing on top of the salad and gently toss to combine. Serve immediately.
